For those of you that did not have an opportunity to meet or enjoy the special dishes prepared by our “Chef Elly” and for those of you that did have that opportunity … we wanted to share with you what is happening in her life and one of her famous receipes.
Elly is now in Mexico City where she will be living with her new husband. We were so sorry to loose “our Elly” since she had become a very real part of our family. However, as we all know at The White Doe Inn, love does prevail! Ellie met and fell in love with Johnthan here in the states; however, Johnthan wanted to return to Mexico City to start a business and Ellie returned with him to start a new life! Elly has gone with our blessings … and the knowledge that we are here for her if she needs us. Ellie’s Mom, Louisa, is still with us as the “Head Housekeeper”. Louisa, like Ellie, is part of our extended family and, like Ellie, she is an outstanding employee.

Many of our guests arriving at The White Doe Inn come with an opinion that they do not like grits … most have surcome to this very southern recipe … Now you can prepare them at home and enjoy a little southern comfort food. Elly’s Grits … White Doe Inn Style
1 Tbsp. Bacon Grease
2 Cups Water
1 Cup Grits
1 Tsp. Salt
1 Tbsp. Sour Cream
1 Tbsp. Heavy Cream
In a saucepan, bring water and bacon grease to a boil. Stir in grits and salt, thenreduce heat to medium-low. Cook 5-7 minutes or until thickened, stirring occasionally. Add sour cream and heavy cream and continue cooking for another 2-3 minutes. Serve with butter and/or cheese. Yields 4 servings.
